This Mango chia pudding uses chia seeds instead of gelatin. The chia seeds naturally gel up into a pudding-like texture while giving a natural boost of protein, calcium, and key vitamins!

- Mangoes (fresh chunks for topping and pureed for the base)
- Chia seeds

What vegan options can I use for the milk?

Mango Chia Pudding
Ingredients
- 1 cup mangoes pureed
- ¼ cup plant milk
- ½ cup chia seeds
- ½ cup mango chunks for topping
To Serve
- granola, fresh mango chunks, mint sprig
Instructions
- Mix all ingredients into a bowl. Pour into containers. Set in fridge for at least 1 hr until chia seeds swell up.
