- 1 cup red Adzuki Beans rinsed well
- 5 cups water
Instructions
- Rinse Aduzki beans well under cold water by scrubbing vigorously. Follow option 1 or 2.
Prep Beans: Option 1
- Let beans soak in clean water overnight before cooking.
Prep Beans: Option 2
- Let beans sit in boiled water for 1 hour before cooking.
Cook Beans
- Place beans and water in a large pot. Let boil. Once boiling, set to a gentle simmer with the lid on (propped open with a spoon). Let simmer for about 1 hr, or until beans are soft and fluffy inside yet still keeping it's shape.
