The Sando: Japan's Famous Sandwich
Ahhh Japanese 7/11 Egg Sando (Tamago)! This is a Japanese version of the egg salad sandwich you can famously find in 7/11's in Japan.
If you didn't know, a Japanese sandwich is called a Sando. If you've spent any time in Japan, you'll come to realize the humble Sando is an iconic everyday lunch/snack. They're usually made white soft, fluffy milk bread and are perfectly cut into neat little triangles.
Egg sandos are not exclusive to 7/11 (the company) but 7/11 convenience stores are known for being stocked full with these delightful eggy sandwiches! They're commonly beside the onigiris (the 7/11 sushi triangles). Japanese convenience stores are on a whole other level of food quality and freshness when compared to North American counterparts.
The most ubiquitous Sando is the egg sando. You'll also find fruit sandos which are lightly sweet whipped cream curiously stuffed into bread with fruits inside.
Ingredients to Make Egg Sando
- White bread (ideally milk bread)
- Boiled eggs
- Kewpie mayo (or Greek yogurt if you want more protein)
- Celery (finely minced)
- Mustard
- Splash of white vinegar
- Sugar, salt, black pepper
Do I Need Kewpie Mayo?
Kewpie mayo will make this egg sando the most authentic tasting since Kewpie is distinctly Japanese. However, you can use ANY mayo and it will still taste similar. If you're not used to authentic Japanese food, I don't think you would notice if regular mayo is used instead of Kewpie.
The Secret to Making Egg Sando
The distinct method of making egg sando that makes it so special is the way the eggs are handled. The Japanese method creates an ultra-creamy mouthfeel for the egg salad that makes it unique!
- First, the yolks are separated from the whites after the eggs are boiled.
- Then, the whites are finely chopped.
- The yolks are crushed into a fine, moist powder (like sand) in another bowl.
- After, the egg whites are mixed with all the ingredients except the yolk.
- To finish, the crushed yolks are gently folded into the egg salad.
How to Jazz Up Egg Sandwich
- Add slices of avocado
- Add a slice of sharp cheese (cheddar or jalapeno jack would work great)
- Add a dash of hot sauce for a kick
- Add furikake or toasted sesame seeds
- Serve with a side of crackers or celery sticks to make it a snack

Recipe for Japanese Egg Sando
Japanese 7/11 Egg Sando (Tamago Sando)
Ingredients
- 6 eggs boiled
- 8 slices or buns milk bread or white bread
Seasoning
- ¼ cup Kewpie mayo or any mayo, or Greek yogurt
- 2 ribs celery finely minced
- 1 tablespoon mustard any kind
- 1 tablespoon white vinegar
- ½ teaspoon white sugar
- ¼ teaspoon black pepper
- ¼ teaspoon salt
- ¼ cup minced green onion optional
Instructions
- Boil eggs for 10 minutes. When done, set in ice bath and peel. Gently seperate egg whites and yolks into two seperate bowls.
- Finely chop egg whites. Set aside in a large mixing bowl.
- With a fork, gently crush the yolks into a fine, sand-like powder so it has no large chuns. Set side.
- Wash and finely mince the celery (and green onion if preferred). Add celery, all other seasonings, and mayo to the mixing bowl. Mix well to combine. Then, add the crushed egg yolk. Mix into it is well incoroprated and the egg mixture is a unfirom yellow colour.
- Scoop egg sando mixture onto toasted milk bread and serve.
Notes
- Sub mayo with Greek yogurt if you want this sando to be extra high in protein and/or you need a low-fat sandwich.
