What is Spam Musubi?
Classic spam Musubi is a popular snack food in Hawaii. It's almost a kind of sushi, consisting of white rice and a piece of seared, saucy spam on top all wrapped up with seaweed.
Musubi is SO versatile which is why you can even make a breakfast version of it! In this recipe, we add a delicious golden omelette layer between the spam and rice.
Breakfast Musubi Ingredients
- Spam
- Eggs
- Cooked sushi rice
- Seaweed sheets (nori)
- Teriyaki sauce
Expert Tips to Make Breakfast Musubi
- Sprinkle sesame seeds or furikake on the rice for extra flavour
- Cook the Spam on low heat, allowing the Spam to get crispy
- Cook the omelette layer as thin as a crepe. This way it can be easily rolled up and cut into Musubi-shaped pieces.
- Press rice FIRMLY when shaping the discs, so it doesn't fall apart when eating
- Add green onions into the rice before shaping to give it a fresh pop of flavour
- Brush ketchup on the spam for a breakfast sandwich vibe
- Add a slice of cheddar between egg and spam
Do I Need A Mold to Make Musubi?
No, you don't need a special mold. You can get by perfectly using wet hands to manually shape the rice into a rectangle shape matching the size of the Spam. Be sure to press firmly so the rice doesn't fall apart when eating the finished Musubis.

Breakfast Musubi Recipe
Spam Musubi with Egg
Ingredients
- 1 can Spam
- 3 cups cooked white sushi rice, cooled
- 4 sheets nori, cut into 1 ½ inch wide strips
- 5 eggs, beaten
- ½ cup teriyaki sauce
Instructions
Rice Layer
- With wet hands, shape rice into equal-sized rice balls. Press firmly and gently flatten each ball to match the length of each spam slice. Set aside.
Spam Layer
- Cut entire can of spam into 10 equal slices. Set aside.
- Set a greased frying pan on medium heat. When hot, brush each slice of spam with teriyaki sauce. Sear each side for about 3 minutes or until lightly crispy. Set aside.
Egg Layer
- In a seperate frying pan, add about ⅓ of the the beaten eggs in a single thin layer to create the omlette. When cooked, gently roll the omlette into a ~2 inch wide rectangle log. Repeat with the rest of the eggs.
Assemble Spam
- Place a spam slide on each rice ball. Wrap nori slice around each musubi and gently tuck loose nori strip end under the musubi. Let musubi rest for 20 minutes to firm up and stick together.
