Usually, Vietnamese jellies are made in a layered pattern with alternating flavours. It's then cut into pretty cubes, like a coconut jelly cake.
My recipe is made the lazy way by pouring it just into a pretty glass 🙂 No need for layering. You'll often find this Asian coconut jelly paired with green pandan jelly.
What Is Vietnamese Coconut Jelly Made Of?
Made with very few ingredients!
- Canned coconut milk
- Agar agar powder
- Sugar & salt

Is Coconut Jelly Vegan?
Yes, it is since it uses agar agar - a vegan substitute for gelatin. It's an extract os seaweed that jellifies liquids its mixed in with. Agar agar jelly is more of a slippery yet shattering texture than the squishy texture of gelatin.
Is Coconut Jelly Good For You?
In moderation, yes it is. You can make this recipe as low sugar (or no sugar) as you'd like. It's full of healthy fats from coconut milk and is topped with fresh fruit.
Expert Tips for The Best Coconut Jelly
- Ensure you mix all the agar agar fully! Clumps will make the jelly not silky.
- Use full fat coconut milk for the creamiest flavour.
- Add fresh fruit as a topping - mangoes, dragon fruit, or strawberries would be amazing.
