Best Red Bean Popsicles (红豆冰棍)
Ingredients
- 1 cup cooked Adzuki beans
- ¼ cup cooked Adzuki beans reserved for texture
- 1 ½ cup coconut milk
- ½ cup sweetened condensed milk
- ½ teaspoon sea salt
- ½ teaspoon vanilla extract
- 1 tablespoon cornstarch
- 3 tablespoon water
Instructions
- Prepare Adzuki beans according to our recipe or from a can.
- Blend all ingredients in a blender (except the reserved Aduzki beans). Transfer into popsicle molds. Add ~½ teaspoon of the reserved Adzuki beans into each popsicle mold to create chew texture.
- Freeze for at least 4 hours or until solid hard.
